You know you guys all your videos are very high quality in how you add music, have good camera angles, appropriate text vignettes, and such. With a little work you could do this professionally and make instructional videos. You're just a few steps away. Think of how quality proliferation of this knowledge could help spread the art!

It's interestingly close to longsword techniques, with a few additions to take advantage of the longer reach and compensate for the lack of an edge.

When the fencer on the right attempts to swing the staff around, why does the one on the left not strike before it comes around?

He could, but he runs the risk of being hit very hard in the process. As soon as the fencer on the right seizes the initiative it is up to the fencer on the left to defend himself. If he could do this while hitting his opponent, then that would be great, but that's at least not how this particular play is described.
