I had the same problem as you have: the dying wish for a good Gibson ES, but lack of financial means. I bought a 333 for 1.000 USD second hand, changed the pups for Classic '57's (2nd hand), bought a black pickguard and there you go. I am not saying that I have the exact same instrument as Johnny is playing on this vid, but this how close I can get with the means I have. If you can find, try it!!

I maybe have a solution but it could take a very long time because of the forms of the table and the bottom. I'm a student in lutherie and my teacher told me it's possible to do and this would be easier to make it in massive maple than sheet by sheet. However this would take many more time. Following him, that would sound a little better acoustically (and I don't mind). But I don't know if I really have time ??? I must work to earn money too.

I played a Strat since '90, installed different pickups and shit, and finally came to a friends house where I found my new love: a '65 Gibson ES-120T. Plugged into an old Kitty Hawk amp, fooled around with it for five minutes and bought it off of him right that day. OH BOY, what a TONE !!! I will keep my Strat for some 16+ fret access reasons, but there has never been a greater blues tone in my life than from that "student" model ES. I'm never ever gonh' sell it again. It's GOT to be a GIBSON !!
