@Liberum When we are in full dinner service, chefs wash their hands somewhere between 30 to 60 times, so its unlikely his hands ever get to a point of sweat that would be that significant. Mine dont.

4:04 shows just how much goes into putting together a dish in fine restaurants. 5 pots, 2 cooks, for one dish. It's even crazier these days. The finer the food the more hands have touched it,

Marco makes a point of it to taste his food with his fingers, but couldn't that make the food taste saltier than it actual is? Especially since he's in a hot kitchen, so he is sweating more.

Man, I wish more restaurants would take up Marco's philosophy on front of house service. I hate it when my waiter/waitress comes by every 10 fucking minutes asking me how everything is, it's like they have no confidence in their cooks to do everything right in a consistent manner.
