The ice cream came out with a lovely smooth texture in spite of not having a food processor or churner. But it doesn't have much flavor; it tastes mainly of the cream rather than the banana. Perhaps in the future adding spices would help, like cinnamon and nutmeg.

I started making this banana ice cream early this morning (that means I started around midnight). I don't have a food processor so I chucked everything into a blender. Phew! It nearly overloaded the 40-ounce glass jar so I had to remove it all to another container. This is going to make a LOT of ice cream.

@zhaneranger it's just another way to flavor the plantains. :) from what i've read it's more effective than just sprinkling the plantains with salt or garlic powder. however, if using riper plantains, it can make them mushier. green plantains are apparently best for this method.

@LaoSoftware No, the flambé adds nice caramelization, but you'll get that anyway just by cooking in the skillet. It's mostly for show. But definitely ad the rum for flavor. I usually skip the flambé and it tastes outstanding

@muetter : I'm a beginner cook. Is it necessary to use rum or alcohol for the banana foster? I don't want to cause a fire.

it probably has something to do with making a starchy layer that acts like a batter when fried. I wonder why there's garlic in the water
