How do you know what key a song is in?

Usually the bass note at the end of the music will tell you what key the piece is in. The last (low) note in the "Moonlight" is A. So it happens to be in A minor. Whether minor or major is distinguished by the 3rd note in the harmony. If it is a major 3rd played (in the last chord) it designates a major key. In this case the "Moonlight" ends with a minor 3rd.

Only on some notes. I don't use rest strokes on every melody note.. just those that I want to have more weight.

@TimHGuitar usually correct but i wouldnt use that as a way of recognising a key in a song

Yes, just usually correct, but not always. Even the Beatles sometimes ended a song on a chord that was not the ONE chord of the key that the song was written in.
