1tbsp sesame oil
1 small onion (or 1/2 of large onion), thinly slice
2lbs of potatoes, peeled and cut into bite-size
1 cup of dashi (or 1 cup of water with 1tbsp of dashi-no-moto)
2 tbsp of soy sauce
1. Heat the sesame oil in a large pan or wok. Add the onion slices and stir-fry for 30 seconds, then add the potatoes. Stir constantly until the potatoes are coated in sesame oil, then cover and cook for 5 mins until the potatoes edges are a little brown.
2. Pour the dashi stock and soy sauce and reduce the heat to the lowest setting. Cover and cook for 15 mins, turning the potatoes every 5 mins so they will cook evenly.
3. Uncover the potatoes and cook for another 5 mins to reduce the liquid if needed. Check to see if the potatoes are cooked, then remove from the heat.
4. Transfer the potatoes and onion to a bowl and pour the sauce over the top and serve. Enjoy.
