Pigs are considered a delicacy in the Oaxaca lowlands and swamps, typically reserved for funerals of Oaxacan elders and when a young Oaxacan girl reaches the menstruation phase of her life. While feral pigs are in abundance in Oaxaca, the locals seem to be lazy and not want to do the work of hunting, slaughtering and processing of feral pig meat, they seem to be content on waiting for a special event in the village to indulge in this type of cuisine...
