Yes the story is true that Ford ( and many on the crew) got food poisoning from eating the local food. They had an extended fight sequence planned but Ford could not in any way pull it off. He told Spielberg he had about an hour in him to shoot, after spending the earlier part of the day in the bathroom. In the end the scene is one of the classic scenes in the movie. Spielberg said he ate only canned food in Tunisia and never got sick.
Actually, most of the crew (including Harrison Ford), got food poisoning the day before and he was really just to sick to do what was written in the script. The script called for an extended fight scene, but because of the illness, Ford got the ok from the director just to shoot him. It looked good on film and the weary, tired look on his face is real.
True! Originally he was supposed to fight the swordsman with his whip, but on the day of the shooting he had the runs and he asked Spielberg if they could cut the scene shorter.
Spielberg only agreed to change it if Ford could come up with a better scene so he asked "What if I just shoot the guy?" And they thought it was funny as hell! :D
Another funny thing about this scene is that the other actor went through a lot of trouble rehearsing the fight scene and the poor guy didn't get to act it!

Harrison Ford had both and I have no idea about the rest of the crew. Many of them were down with something though, such were the conditions.
