By flexing his muscles Manabe generates small electric pulses which he uses to control other systems. In this video you can see how he controls the sound by moving his hands, the sensors are hidden under his sleeves and are connected to his underarms. Under the surface of the table, there is a slider with an electromagnet on it, which he also controls by flexing his muscles. So it is the electromagnet that lets the spoons dance around on the table. At the end of the video you can see the hidden technology.
