Superb instructional video. The two best omellete videos I've seen are Julia Child's (of course) and yours. And I REALLY like the Mingus track. Very good taste, my friend. I'm gonna give the omellete a shot this weekend. Rock on!

Well thank you. I honestly have to thank my dad for teaching me all the culinary tricks, he was a chef and he went to the Culinary Institute of America.
