F.Y.I. Eggs are very nutritious,they really do not need substituting,unless you are vegetarian.The fat in eggs does not raise your cholesterol,as it is water soluble,and actually eating eggs lowers cholesterol because one side of the fat molecule bonds with water and the other bonds with a trans fat and eliminates trans fat out of your blood system.The idea that the fat in eggs is bad for you is as mythic as the idea that fat in food makes you fat.

@YogiToad You must be the spin doctor for the Egg Board. Hmm . . . eggs are bad if you're a vegan. Eggs are bad if you hate factory farms. Eggs are super bad if you have egg allergies. Shall I continue?
Eggs lowering cholesterol is an amazing feat. Please reference a good study that wasn't funded by the Egg and Dairy Board. Better yet, take a hike.

Ummm my grandma had alot of hens and I know for a fact that they weren't given hormones, but still laid eggs everyday. Maybe not so big or as many in a day, but they still do it. Not all companies use hormones but fair enough, you made a great point :)

not necessarily. i've done it multiple times and never really tasted it. i use organic unsweetened apple sauce.

1/3 cup of apple sauce is a good egg substitute as well for sweeter dishes.
Where do you find flax seed powder?

@16hilltyKMS : A lot of health stores carry flax seed powder and if you can't find the powder, get the flax seeds and grind them in a spice grinder :)
