Exactly, you really shouldn't run your web server under a user with full access to your system, forget to change a default password or don't patch an exploit quick enough and someone could potentially gain full access to your machine via the internet. Would be interested to know what his problems were exactly in trying to change the user (he should have at least tried since that was a different machine)

This answer is probably not relevant anymore to you, but in case anyone ends up here:
Running Apache (and other servers) as any user is not dangerous by itself. However, if somehow a hacker gains access to the server (e.g. through an Apache bug) where they can run arbitrary code, that code will be run as whatever user Apache was running under. If you run Apache under a specialized user (that has access only to some files in Apache), the risk is minimized.
