Best pancakes we have ever had! :)

1 c. all purpose flour
2 tsp. baking powder
2 tsp. finely shredded lemon peel
1/4 tsp. salt
1 egg yolk, lightly beaten
3/4 c. milk
1/4 c. butter or margarine melted
3 egg whites

In a medium bowl, stir together flour, baking powder, lemon peel and salt. Make a well in the center of the mixture and set aside.

In a small bowl, combine egg yolk, milk and the melted butter. Add egg yolk mixture all at once to the flour mixture. Stir just until moistened (batter should be lumpy).

In a medium mixing bowl, beat egg whites with an electric mixter on medium speed until stiff peaks form (tips stand straight). Gently fold egg whites into batter, leaving a few fluffs of egg white. Do not over mix.

For standard size pancakes, pour 1/4 c. of batter onto a hot lightly greased griddle or large heavy skillet. For dollar sized pancakes, pour 1 tablespoon of batter on hot griddle. Cook over medium heat about 2 minutes on each side or until pancakes are golden brown.

These are light, delicious and very, very filling. Should make eight 4-inch pancakes or 20 2-inch pancakes.

  • I kept meaning to come back and comment and failed. I think the extra baking powder was to help keep the egg whites making the souffle aspect of it. They do really add nicely to the lightness of any pancake; even more so with heavier flours. Regardless, this is a great recipe - and a use for lemons! Yay.
