INGREDIENTS:

2 poblano chilies
1 cup chopped tomato
1/4 cup chopped onion
1 pound (450 grams) chorizo
8 oz Monterey Jack cheese in sticks or cubes or any cheese that you like

2 ears of corn
1 and 3/4 cups masa harina (para tamales)
1 cup heated chicken broth
1 1/2 teaspoons baking powder
2 tablespoons sugar
1/4 cup lard (manteca)

Corn Husks or you can use the husks from fresh corn

Serve with sour cream and hot sauce.
Refried beans and rice go with this too.

  • I just made these and they're delicious! I omitted the tomato, added papas and refried beans to the chorizo mix. I also added a chipotle pepper in adobe sauce to my masa mix. It's my first time and I love it..I don't really care for tamales because they're boring and bland to me, but this has lots of flavor going on. All tamales should be a little jazzed up.

  • Just wondering, why not instead of adding oil first just put the chorizo in and fry the pepper with the grease from the sausage??

  • @iLikeCookie88 good point.. I guess you have to have lots of patience to make these great dishes.. I got caught up with the worlds fast pace of cooking. Everything is done in a microwave in my world..lol

  • @Dan4USCTroy A lot of people find cooking relaxing, and you know that there won't be any nasty additives if you make it yourself...
