Photos documenting the building of a wood fired Italian brick oven based on plans from FornoBravo.com. Includes footage of a pizza baking in 90 seconds.

Unlike an Alan Scott oven, the Pompeii has a circular interior instead of the Scott-style rectangle. The Pompeii design is an excellent choice for baking pizza, bread and meats.

This build took approximately one year to complete.

  • how many bricks do u use for this oven? can u give me the dimensions of the oven?

  • @danelugdz The oven has an interior diameter of 42 inches. I used about 300 firebricks to construct the dome. You can find everything you need to know about building this type of oven (including FREE plans!) at FornoBravo [dot] com.

  • Great Video, first of all. I am in Massachusetts, planning on Spring Construction, following the Foorno Bravo Pompeii plans. One thing puzzles me. The exterior pics on the video show the center filled with two "half moon" cuts, but the interior (skylight) view shows three thirds? Regardless, Your pics of the construction steps are so clear and defined. Do you have them posted on the FB website? They would be invaluable to me as we continue with our plans.   • @impaladave1965 Hello and thanks for the nice comments! The 3-piece center keystone at the top of the dome was done with "splits" (half thickness bricks). It was too difficult to cut full size bricks to fit snuggly in the small space. After installing the three-piece keystone, I mortared the two half-circles on top. My build is detailed on the FB Forum. Look for the thread titled "My Old Kentucky Dome" by user Ken524. Good luck with your project!!

  • Oven construction was 1st class, a lot of attention to detail and bricks laid like a true pro... Asthetic finish wasn't 2 my taste though... Guess beauty is in the eye of the beholder

  • Great looking oven and pizza!!! I'll be over in 5 minutes!!! :-D Thanks for sharing. I plan to start mine in a couple of months. Got my Pompeii plans and on the forum so hopefully, in a few months, I'll be cooking such pizza!!!
