Sherbrooke Village is a living history museum in Nova Scotia. They have a real blacksmith, an old fashioned printing press, a working water-powered sawmill (shown in these videos), a potter, and a variety of other things, where all the people dress as people would over 100 years ago. See http://museum.gov.ns.ca/sv/index.php for more information.
While the river was not especially large coming up to this facility, it was guided into 2 smaller paths (if I remember correctly)--one for the water wheel, and one for flow control I imagine. I didn't notice if there was a fish ladder--we only stayed a short time here.
