Because the fellowship had to be sundered, and he was the least important character. Each race needed equal representation in the fellowship, and there was already a man. It also was to show that even the greatest of Men could succumb to the succor of the One Ring of Power, and the tragedies that befall those that seek to claim it. He was, in a way, a reflection of Isildor - a great warrior of men who died in correlation to the One Ring's malice.
