I know you're supposed to add flower before egg and bread crumbs, but can you explain why? I've had perfectly good results (at least with fish) skipping the flour all together.

the flour simply dries the surface of the protien and makes a better base for the egg and crumbs. The flour and egg form a thin "batter" that the crumbs stick a bit better too. I've also skipped this step before with fish, sometimes you can get away with it. For chicken I recommend using the flour.
