There's an Easy mode on PS2? I played a few times and I only saw Normal and Pro. I presume Normal is Easy?

The North American version doesn't have an Easy difficulty setting. The NA GC version has Easy and Normal, but lacks Professional difficulty.

Easy is, obviously easier than Normal. It makes general gameplay easier (damage input and output, enemy aggression, etc.) and lets you skip a few areas such as the Garden Maze and King's Grail rooms.
