I've lived in the South my entire life, I've always heard it pronounced the way Bugknuckle says it.

BugKnuckle - you are def not from the south. It is a crappy (crap-ie) there is no "o" anywhere in the spelling of this fishes name. Why do you pronouce an "o" when there is not one? When you get your crops out of the field do you say " I harvested my crap"? I think not.; how do you get "crop" out of "crap"?
How about having a real person read this instead of the computer! The fish is a crappie (crop-ie), not a crappy (crap-ie)!
