i was under the impression that steel cut oats were still flash steamed, and there fore not raw...

I personally don't like soaked grains. I prefer the oats to be saturated with air in the center, and partially saturated with milk/fluid around the edges. :-)

Have you ever tried to eat the steel cut oats directly, i.e. without soaking them?

Quick oats soaked in almond milk is great too IMO and they do not need to be soaked that long to be ready to eat. What is the difference in the steel cut oats and quick oats besides the very high price of them?
Quick oats are cracked open but why are 'steel cut' oats preferable?

@lancer89032 From Wikipedia: "Oat groats are coarsely ground to make oatmeal, or cut into small pieces to make steel-cut oats, or first steamed and then flattened to make rolled oats. Quick-cooking rolled oats (quick oats) are cut into small pieces before being steamed and rolled. Instant oatmeal is pre-cooked and dried, usually with sweetener and flavoring added."
Quick/instant oats are not raw. Beyond that, just looking to minimize processing. Hope that helps!
