my method is score the rind , coat with white wine vinegar OR oil , then rub in salt , roast in high heat for 20 mins then reduce for the remaining cooking time , perfect crackling every time !

Good video, however after drying the skin, it gives an even better result if you rub the skin all over with extra virgin olive oil then rub in the salt, preferably sea salt.

Hey guys a cool way to also do the seasoning is to make a compund salt.. you grind everything herbs and all until its a nice green salt and then rub it in ! dee fucking licious

Pork crackling is absolutely delicious. Hugh's cooking is tremendous and he always comes with with some original and tasty recipes.
I am off now to buy some pork loin...Mmmmmmmm
