Our first home-brew. It's a Cooper's Bavarian Lager and within 24 hours, she was 'burbling' her first words!!

  • 22 degrees celsius is good but if you can, get it down to 18-20 degrees and you will produce a much better beer. Fermenting at 20 and over is what gives homebrew that 'fruity taste'. The only reason the packets say to go as high as 24 degrees is just because of convienience, alot of people find it hard to get lower temps but

  • Okay, will do! Will aim for 18-20 in future. But is this 'fruity taste' seen as an undesirable outcome?

    I'm in Melbourne and we had it sitting in our laundry - we weren't even trying to keep it warm like I have heard many others do with rugs, electric blankets etc.

  • just in interest, what temps did you ferment at?

  • Constant 22 degrees celsius for about 7 days.

    Bottled for 2.5 weeks before we tried it and it's surprisingly good! Nice fizz, cloudy colour and good full-bodied taste.

    Makes you burp a lot though - next time we'll use carbon drops at bottling rather than a teaspoon of sugar.

    Going to make our 2nd brew this week - probably a Cerveza....

    Did a hydrometer measure last night and it was a beautiful colour with a nice level of bubbles and cloudiness....

  • The cidery taste also comes from the sucrose(table sugar) in the Coopers brewing sugar. I would always use the Brew Enhancer 2 instead of the brewing sugar. It contains light dry malt, dextrose(corn sugar), and maltodextrin. Or you can buy your own from a home brew store its usually cheaper.

  • Hey mate you seem to know a bit about this brewing.

    I have bought myself a coopers homebrew kit and i am into the 3rd day of brewing. it hasnt fallen below 22 degrees but my airlock isnt bubbling like that? all ive ever seen it do is build pressure very slowly on the first night it was brewing and it must have bubbled through at night. as its not moving now?

    On the dvd it says it may not bubble. Is this true or have a stuffed it up somewhere?

  • Ahh i'm in melbourne also in the bayside area. To some if you like a 'cider' like beer well then ferment at 24 degrees but if you like a true tasting beer ferment down lower and depending on the yeast you use you can still get very fruity flavours.
