I know of several professional foragers who have tried to make it edible... Ray Mears, Gordon Hillman, Tom Elpel... none of which recommend eating it. I have a friend who told me he found one once, cooked it and it was good. Personally, I've been trying for decades to make one edible and have not succeeded.

Well... that is a hard question to answer because what does poisonous mean? "Poisonous" is a spectrum, from an irritation on one end -- literally -- to killing you within minutes. Will nuphar roots kill you within minutes? No. Is it bitter and will upset your stomach? Probably. I have tried for years to make it palatable and have not succeeded. The 300-year-old report that the root is edible is I think in error. It ain't deadlly, but it ain't fun.

Find some shallow water and pull one up. Or, gets some mature seed pods. Throw them in a bucket of water and let them rot for two or three weeks. They will smell. Then put those seeds in your pond. As for the videos thanks. I've got four new ones nearly ready to go.

Hey Green Dean,
Most of the pond lily pads by my house (northern ontario) are much smaller and have white flowers. my question is: are the young, purpleish/red, submerged leaves always edible in all types of lily pads?

@bscavuzz No, it varies from species to species. Identify exactly then find out.
