  • This is a roadside kiosk (tapari) in a small industrial town in eastern India that goes by the name of Bokaro Steel City. I was so fascinated by the dexterity with which he was making it that I asked him to make a whole bunch just to video him doing it. Oh how I miss the emarti....

    Nope, that is a common misconception that imarti and jalebi are the same.

    ALEBI is made from all purpose flour ( maida ) and little rice flour ....where as IMARTI is made up of urad dal flour ....JALEBIS re fried in vegetable oil and IMARTIS are fried in Ghee ..JALEBIS are in spiral shape where as IMARTIS have ringlets in a ring ...JALEBIS are lighter than IMARTIS ..
