Rich, heavy chocolate flavour is brought to the front of the palate in these cupcakes with the thick buttermilk cocoa batter bursting with subtle cinnamon and coffee notes, topped with a delicate Almond Buttercream frosting.
Here's the Ingredients:
2 2/3 cups all purpose flour
1 1/2 cups unsweetened cocoa powder
2 tablespoons ground cinnamon
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
3 1/2 cups sugar
1 1/4 cups freshly brewed coffee, cooled to room temperature
1 1/4 cups buttermilk
3/4 cup vegetable oil
2 large eggs
2 large egg yolks
1 tablespoon vanilla extract
1 1/4 cups (about 7 ounces) mini semisweet chocolate chips
Frosting:
4 cups Powdered Sugar
3 sticks Butter
1 teaspoon Vanilla Extract
1 1/2 teaspoon Almond Extracts
