Evolution is the process of changes across millions of years, but the more micro evolution type and macro evolution have both been documented and worked with.

By the way, humans are one of the great apes, and fish and dogs are pretty far apart.

You deny evolution, which has tremendous amounts of evidence, but assert god or creationism, which has no evidence.

That is exactly the point that Dr. Kent Hovind so eloquently explained. Science consists of that which is observable, and nobody has ever observed an ape evolving into a human or a fish into a dog.
