Shape Services IM+

IM+ is a multi-network instant messaging application for the iphone that is able to login to all your instant messaging accounts. All from one application you'll be able to see your Twitter, Skype, Facebook, Google Talk, Yahoo, MSN, AOL, ICQ, MySpace and Jabber friends.

The latest version, 3.4 has the ability to recognize your speech however that functionality is only available as an in-app purchase. It also has the ability to display animated emoticons and copy text from chat bubbles.
