Comme des Français je crois que la musique salsa à la fin n'irait pas.

Aaaargh, never cut the Montbeliard: it will loose all its juice. Just cook the green cabbage with white dry wine, and add the Montbéliard (not cutted) 20 to 30 minutes before the cabbage it's cooked, and voila (serve with matched potatoes)
