To complete this How-To you will need:

5 ½ + c. Unbleached, all-purpose flour
3 c. water
1/3 c. sourdough starter
3 tsp. salt
1 c. Kalamata olives
A non-metallic bowl
A mixing spoon
A baking stone (optional)

Step 1: Mix culture and let it grow

The night before baking, mix 1 ½ cups of flour with 1 ½ cups of water. Then mix in 1/3 cup of sourdough starter and let that culture grow overnight.

Step 2: Combine ingredients

Combine 4 cups of flour, 3 teaspoons of salt, and an addition 1 ½ cups of water. Then, mix in 2 cups of the new starter and stir.

Tip: Keep the leftover starter in the fridge so you can re-grow it and reuse it later.

Step 3: Knead the dough

When the dough stops sticking to the bowl, place it on a floured surface and knead it for a few minutes until it's silky smooth.

Step 4: Let dough rise

Place the dough back in the bowl, cover it, and let it rise for 1 to 3 hours.

Step 5: Flatten the dough

Flatten the dough out on a floured surface and fold in a cup of lightly chopped Kalamata olives.

Step 6: Let dough rise

Divide the dough and shape them into two smooth, round loaves. Cover them and let them rise for 2-4 hours.

Step 7: Preheat the oven

Place your baking stone into the oven and preheat it to 450 degrees Fahrenheit.

Step 8: Slice pattern and bake

When the dough doubles in size, slice a pattern on the top and bake it in the oven for 35-45 minutes.

Tip: Occasionally spray inside of the oven with water to keep the bread from drying out.

Step 9: Let the loaves cool

Let the loaves cool completely. Then you can invite that special someone over to enjoy it with you.
