As we try to become more self-sufficient, we need to find alternatives to foods we would otherwise buy in shops. Getting a source of fats is more challenging but we do swap produce for game, some of which contains a bit of fat. To extract it, we need to boil the carcass to make stock and then spoon off the solidified fat. www.self-sufficientinsuburbia.blogspot.com

  • I'm a vegetarian, but I like to be broad-minded. Have you ever tried roast peacock or roast swan? I think Mrs Beeton would have a few peacock plumes sticking out of the final product, as an ornament. I suppose you could have some long pheasant tail-feathers as a decorative garnish? Was it a Common Pheasant or Golden Pheasant? In Brideshead Revisited they ate plovers' eggs and pickled walnuts. Plovers are protected, here, in Australia. So the eggs are out of bounds! I always enjoy your videos!
