If you ever watch some of the best wave guys like Felix or Ben Wilson, they almost always unhook, same as freestyle guys even when they are not doing moves with handle passes such as railey or Sbend. If you dont unhook on a wave your really limiting yourself to, as you said "kiting the waves more than surfing them."

haha these comments are ridiculous, ben wilson grew up on the sunny coast. Aaron hadlow is a pom. He is doing very very well in the waves for someone from such an awful place. Im impressed.

If you don't unhook on a railey it won't look very good, as you won't be able to fully extend your body back and get your board above your head behing you. To get the wakestyle look you need to have the bar extended way ahead of your body. The Sbend is just a railey with a spin, so same thing really.
Unhooking in waves is good for movement, but you have so much less control over the power. In the waves sometimes you want to snap the power off to 0 to just surf.
