A video about making quince jelly. Quinces are hard, fragrant exotic fruits which can't be eaten raw but need cooking. Asmall amount of sliced quince added to any apple dish is great, and they can also be added to meat stews such as lamb tagine, but the most common use for them in England is to make the preserve quince jelly. This can be s[pread on toast and eaten like any jam, but is at its best with roast meat. I particularly like it with roast lamb.

  • I've just been notified that YouTube's tools have detected my use of copyrighted material in this video, namely a piece of Wishbone Ash music, 'Flowing Free' from their classic album 'Argus'.

    I think its fair use, the music happened to be playing while I was in the kitchen, and may even encourage others to buy the Argus album as I did after hearing it, but fair comment and I will take it down if asked. Please EMI, its just a minute of incidental music which I paid for. Kind regards.

  • Nice big quinces - I think they are a very underrated fruit. We have planted one tree and have about 5 bushes. Out of interest, what is this fruit preserve competition (did not see the video)?

  • @ivankinsman a few vids back I explain. Three prizes of fruit books (The Apple Grower by Michael Philips or The Apple Book by Rosie Sanders or £30 Blackmoor fruit tree nursery vouchers for best recipes for preserving autumn fruit surplus. 1 by a draw, 1 by popular vote and one my and Julia's choice.

    The definition of 'fruit preserves' will be liberally interpreted. Still time to enter until the end of the month.

  • NB the fruit preserve video competition is still live, I just haven't commented much lately as extremely busy with apple harvest/sales and medical conference season. decisions will be made in early November

  • just to say thanks for posting - trying to do this first attempt at any kind of preserve making and most helpful!! (missing a jelly bag as couldn't find one locally anywhere in the Alps yesterday!! got a bit of cloth....)

  • Papayas are just monstrously bigger.

  • Quince looks an awful lot like papaya. Is there a relationship? I know they come from different locations but it looks so similar.

  • Would have enjoyed being a part of this friendly competition, but sadly our crop of quince was badly timed (lot of rotten quince on the ground). But I haven't had the time to prune them when it was time, so shame on me. Will get on it as soon as the last leaf goes, it's on top of my to-prune list this year.
