As the block stun keeps you on the ground and the jump takes a few frames, so you cant jump. Otherwise gief's kick-grab trick becomes nothing.

yeah i just jump over raging demon and ryu's super. in fact, i try to jump over many of the moves that just go horizontally

Hold up and back. The demon is not guaranteed all most all of the time. I will admit I have seen what appeared to be unavoidable demons were they go directly from block stun to demon but that was only once in a while in the corner. The rest of the time I could visibly see a frame or so of animation and if you hold up you've defused the demon. I think it is more of a situational dynamic that people just haven't adapted to.

It was so fucking obvious Akuma was going to raging demon ftw in match 1 round 2. Jump next time please. Actually same thing with match 1 round 1. Lack of situational awareness ftl.
