most culinary critics are arrogant jackoffs anyway. It's one thing to find flaws to be improved upon no matter what and how good a dish is, it's another to have an inflated attitude and to behave like as if these chefs' careers hinges entirely on what some spoiled, cocky "gourmet critic" thinks. As a chef you are cooking for a wide audience, not just a couple of "I know better than you" food tasters.

@rostant999 he's not cantonese, nor is he from HK. He's actually a Singaporean of Teochew descent. He's just trying to show off how an expert he is in Chinese cuisine and that no food Chen(chen's the only Chinese chef I've seen him comment about on this show) ever cooks will be good enough for him. And he actually is only well versed in Chinese cuisine and to a much lesser extent Japanese cuisine.
