This is a bit of a stretch, but I think the reason people like this better than the WWF is the same reason people like the Mythbusters show better than some of the Myth'sters clones. It is non-TV people doing TV and that gives it a "truth" that the WWF does not have. The WWF has polished TV people who would never do what Jay Youngblood just did, block another guy's face from the camera when he's talking. This interview has a tension to it that a WWF interview does not have.
