Bratwurst is one of my favourite sausages to eat and cook. Today I show you how to make them at home with a very simple recipe. There are a lot of very complicated recipes around, including many that aren't even close to real bratwurst. This is a stripped to the basics recipes, so feel free to add extra spices, a bit of chilli is great mixed in :) Give them a go!

Ingredients:
750g pork shoulder, rind and bones removed, but fat retained
250g veal chuck
¾ tbs salt
2 tbs fresh marjoram mashed into pulp (or 1 ½ tsp dried marjoram)
½ tsp nutmeg
½ tsp white pepper
½ tsp ground caraway seeds
¼ cup water
Natural pig sausage casing

@SporadicallySane Nope sorry wrong, I have lived here 10 years and you can get a lot of great tasting sausages here in Japan, but everything is only about 5 cm long, there is nothing like long aussie sausages.
After 10 years here in Japan I would NEVER set foot in australia again. I know what is in my foot here in Japan because the rules are very strict unlike in australia.
