Quebec produces three quarters of the world's maple syrup thanks to warm days and freezing nights during Spring - ideal conditions to collect sap. There are thousands of professional producers in the province but there are also families who tap their own trees to make their own. Families like the Knights who collect the sap the old-fashioned way. Not with plastic tubing but in buckets and by hand. If you visit Quebec in the Spring be sure to visit a sugar shack to see the process for yourself and try the sugaring-off meal - to celebrate the maple harvest. This was filmed in the Laurentians.
