Delicious Mexican recipe...one of my favorites. My friends suggested for me to leave at least one chili pepper with seeds intact to give the dish a slight spicy kick and to add a slight bit more salt to the sauce. Simmering for longer time in the verde sauce will increase flavor and make the meat a lot more tender. This recipe makes a lot, adjust the quantity of ingredients based on how much you are making.

  • @J25x Ahhh...you're idea sounds good...a roux with the pork fat would definitely add a lot more flavor to this dish...next time I make it, I will try this method out! Thanks man.

    Hey thanks for the reply. I come from a Mexican American family and I've seen costillas made (not with a green sauce) but with a typical red sauce. I like your recipe as I like nopales, one thing I've seen is if you fry the costillas before you boil them, and use the oil/rendered fat left in the pan to make a roux with a bit of flour before adding water and the sauce, it taste pretty good. At least the red sauce version.

  • @J25x No, I'm of Italian descent, but I have many mexican friends and this is one of my favorite mexican dishes they introduced me to. This video illustrates my first attempt to make this dish. If you decide to try it, I would add a little more salt to the sauce and at least one chili with the seeds intact for some heat...that is what my friends recommended when I had them taste it...other than that, they said it was really good ^_^
