We are starting our summer canning with strawberry jam.
Normally I use low/no sugar pectin and only add a cup or two of sugar in my recipe. However I'm out of that so I'm using up some regular pectin. This uses more sugar then I like, but considering how small of a serving you use it's not to bad.

Basic Strawberry Jam Recipe
2 quarts strawberries
2 TBS lemon juice
7 cups sugar
1 packet powdered pectin

Mash berries and add lemon juice and pectin.
Bring to a boil and add sugar.
Boil for 1 minute.
Remove from heat, stir and skim for 5 min.
Ladle into jars and can for 10 min.

  • Great video, attempted to make jam once as a teen and it didnt work, buying it already made seemed easier. pitty youtube wasnt arount back then, am tempted to give it another ago now 20+ years later.

  • @HomesteadAcres hello,i just made this recipe except i mashed the berries instead,when they were finsihed boiling,the strwaberries seperated somewhat and are at the top of the jar and it looks like there is just juice in the bottom,is that normal ?thank you great channel.

  • @18wheeler76 It does happen some times, just stir the jam up before using it. But the step when your stirring the jam and skimming the foam off, after cooking is what helps to prevent the fruit from floating. You could try doing that a bit longer next time, it should help!

  • Could I use gelatin instead of pectin? I could find pectin in our area.

  • @rosehouse32 Sorry for the very late reply. YT hasn't been sending me the comments. Gelatin isn't the same as pectin, but I have seen jam recipes that used it. I would think that 1 or 2 packets would work. Did you happen to try it?

  • Thank you for your videos. They are very informative. Why do you sometimes use a pressure pot and other times a stock pot? Does it depend on the type of food your canning or just whatever is convienant at the time?

  • i would like to make jam using all organic ingredients. any suggestions? i dont really want to use pectin or gelatin. so could I substitute sugar instead? just asking because I have never made jam before.

  • Hahaa, yeah I'm a teen that will be attempting to make Jam. Youtube is pretty handy, God only knows what I would do if it had no tutorials...I would have to ask people! :O haha but I didn't know you had to do some things.. I thought it was mash, boil,sugar, stir and put in the jar... I didn't know I needed fancy pots :) Hopefully mine will end up as wells as yours :)

  • @HomesteadAcres I use gelatin when making mine, i stock up when they are on sale, and it works great! hope that helps:)
