"A Cavatelli Machine is No Good for Nothing!" - Mary Bodanza - August 29, 2007
This is what Nana said when we asked her why she doesn't use a cavatelli machine. :-)

Today Nana taught us how to make her homemade cavatelli! They are gold! Mom and I spent an afternoon learning the recipe and the technique involved in making the best pasta around!

The videos are separated into 4 segments because I only had my hand held camera instead of my video camera and I had to switch memory cards. Sorry for the inconvenience.

  • To those of you who said Cavatelli has ricotta cheese in it, you are WRONG!!! IT should not. And I have been looking for a receipe that does NOT have ricotta in the dough!!  Thanks Nona

  • Thanks for the video! I made homemade pasta today. I made Fettucini using my food processor and pasta maker my Mom gave me. It came out excellent. I was wondering if I can use the same doudh recipe for Cavatelli? I used 2 1/4 c flour, 2 eggs, 1/3 c water, 1 tbsp oil, 1 tsp salt.

Your right "pure gold" Everyone loved them. I did cheat a little with the cavatelli maker, worked like a charm. Thanks again!!!!
