Are you viewing the output from the camera on a TV/Monitor?
If you just want to make the stills into a movie and keep the quality try mpegstreamclip (free). Animation wise have a go with animator dv simple + (it's free) the end output will always be DV resolution but it's a friendlier program than Monkeyjam.
