@dwsnare I agree with you. It would make it even and it is a great tip for those that are just starting out. This way is less intimidating and seems pretty simple to do. I am an amatuer baker and have always wanted to try and make one of these just to say I did and now I think I will give it a shot. They look so beautiful and I have heard they taste just as good too. (Now where to find a China cap....)

Ok look first of all let me go down about 4 comments..!. thats not a chinois its also not a "cone thing", its called a china cap..2. if you would have been paying closer attention you would have noticed her spray it with NONSTICK spray so NO it wont stick...

this is shit. the right way to do this is not with that cone thing you are supposed to do it by hand from the bottom up!

Leaning tower of Croque. Using the inverted cone is actually a good concept, obviously get the base rolls evened out to avoid the lean.
Personally i stack using circular a tray with a lip around it, i also use chocolate which dries quite quick to hold it 2gether as i stack. I also use chantelly cream (1/12 cream, 1 tble icing sugar, 1 cap vanilla xtract).
At the end of the day, it's each to thier own and how we like to cook.
