The Executive Chef Video-recipe Series: Episode 1-B: Mango Salsa.
Recipe:
1 yellow, red, orange & green pepper (prefer Holland bell)
3 or 4 large shallot bulbs
2 Cups ripe Fresh Tomatoes- rough chopped
5 clove garlic- roasted golden brown
1 Tsp olive oil
1 large Mango
3 Tsp chopped fresh cilantro
3 Basil tops
2 oz Hot sauce
1 Lemon & 1 Lime
2 Tsp Cajun seasoning (See our web site for recipe- or use store bought)
2 Tsp Honey
1 bunch Scallion or Chive
Sea Salt (taste)
Cut & remove stem & seeds from peppers- then rough chop peppers, shallot & scallion
Add Roasted Garlic Cloves, Cilantro & Basil to peppers & Scallions in a large bowl
Peel & rough chop Mango- add to bowl
Process all ingredients (in bowl) in a food processor, doing small batches- leave chuncky until last batch-run this batch smooth
Return to a large bowl processed ingredients
Add Salt, Cajun Spice, Honey, and the Zest and Juices of Lemon & Lime
Yield 4-6 cups (depending on pepper sizes)
Can be served immediatly- or cover & chill for several hours for a more complex, blended flavor.
Store Covered in cooler (35 F) for up to 7 days
