@Rib5 You can change tile colors and choose the white or black theme. The lock screen picture can be changed and the default picture on the picture hub and some other tiles can be customized themselves.
The manufacturers cannot edit the UI, but will instead add apps or change default tile color. This means you can get updates to new versions immediately, such as an update that might allow copy/paste or a socket library for developers. If it weren't consistent, you would have to wait for say LG

Is there any way to customize the appearance other than adding / removing blocks? I heard that WP7 won't allow manufacturers to put custom UI's or themes.

While playing music through zune you can just tap the black space above the hubs on the home screen or the volume controls to bring up the play/pause button.
