@MegaVersatile From my previous reply it must be clear that any sour acid like citric acid, sour lime or lemon, or vinegar can be used. Baking soda react with sour acid and make air bubbles.
@MegaVersatile you can use eno instead of citric acid and baking powder. The acid and baking powder combo chemically react and make air bubbles. Same thing Eno does. Makes dhokla puffy. You can also use cold soda water instead of water. Idea is to get air bubbles in batter.
