it's correctly spelled Pilipino, not Philipino ! Filipinos are the people of the Philippines while Pilipino is the national language. Pilipino also refers to anything done, made by Filipinos. Pinoy is a slang word which also refers to the people of the Philippines. Pinay refers to the Filipino women aka Filipina.
i don't think that filipino food is more mexican/south american oriented rather than spanish and south east asian influenced.. that just doesn't describe our food right, but in another way our cullinary culture is hard to define, we're influenced by every country that has been there..
