In the video she made one pie, the recipe shown at the end made 2 pies. Did she make one recipe and bake it in 1 deep dish pie shell. or did she make 2 regular pies.

since the bottom is pretty much wet how exactly can you tell when it's done? Last time i made this the bottom was too wet after coming out of the oven. Not sure if it was not cooked enough or maybe too much water, not sure why that would happen.

That's one of the problems with a Shoo Fly pie, trying to figure out when it's done. There should be some moisture in the bottom, (we always called that the "sad streak", but I don't know if that's an official term), but you don't want it runny. If it is too dry it doesn't have the good mole asses flavor, and is even messier to eat than normal. We just stick a poker of some kind into it and see how much goop sticks, to see if it is done. If not done, give it another 10 minutes or so. Of course,

Oops. Of course, it will continue to cook a little bit when you take it out, so you have to kinda guess at the amount of time you need. The best thing is to make one every day for a week or two, then you will know exactly how long to cook it. Plus you get to eat a LOT of Shoo Fly pie, and there's nothing better! :o) Too much water would probably adversely affect it, or too little baking soda. It's all pretty much magic, the way this pie comes together.
