In this video I will show you how to make an easy enchilada casserole using your leftover turkey from your thanksgiving dinner. You can also use ground turkey or beef and for a vegitarian version you can use Morning Star soy crumbles. I use Mission corn tortillas, Sargento mexican blend cheese, Enchilada sauce, and left over turkey. I bake it in a Pyrex baking dish.

  • Wow, this Lady made it seem easy making Turkey Enchillada Casserol and baking it in the oven 375 for 1 hour. I have to make Turkey casserol for my mate. This one is alot easier to make and bake than other turkey casserols. This woman makes cooking easy, baking easy and fun.
