@ss07100ss i never said that these guys were italian. the original owners of lombardi's and the recipe all come from italy. btw this pizza was the bomb when i went to ny.

well i'm of mexican and italian heritage, so i'm not going to hate on these guys who are just trying to make a living. the recipe was created by italians, so it really doesn't matter who works there as long as you follow it. besides mexican's are some of the finest chefs/cooks in the world. jmho

the reason the pizza is good when mexicans or any other nationality make it is the recipie and how its cooked. once you know that anyone can do it. if you have a 700 degree coal fired oven that is a start. to me a pizza has to be cooked in a super hot oven that will cook it in between 3 and 6 minutes. when it comes out it will have burn marks on it and should have a slight flour taste. and the cheese should have some crisp spots. but its all in what you like. chicago pan pizza sucks.

If you want to understand a bit of the influence and sociology of pizza read some of the comments in this thread. Some fans are true fanatics about Lombardi's, while others say te pizza is just mediocre...
The truth of the biscuit is that everyone is 100% correct...Any opinion you have about pizza is the right one!

Just ask Anthony Bourdain, or any chef of any note--you want guys who'll get it done right and get it done fast in a restaurant kitchen--deep prep, provisioning, plating, you name it--hire Latin Americans (not just Mexicans). Learn to speak a little of their language, pay them reasonably well, and you'll get loyalty and quality work for as long as they stick around. This is NOT a well-kept secret in the restaurant industry.

@RobDog65 well stated. I just ate in an Italian Restaurant mostly staffed by Latin Americans: the food was incredibly good! Great point!
